Spicy and yummy Mexican Enchiladas

December 4, 2007

I was browsing the net again (I always do!) and found this easy to make yet (looks) yummy Mexican food at Yahoo.  What caught my interest was it's spicy! Of course Mexican cuisine is known to be spicy. So what is the name of the food?  It's Spicy Chicken Enchiladas. The ingredients includes:

  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 tablespoon oil
  • 1 pound boneless skinless chicken breasts, cooked, shredded
  • 1 1/2 cups TACO BELL HOME ORIGINALS Salsa, divided
  • 4 ounces PHILADELPHIA Cream Cheese, cubed
  • 1 tablespoon chopped cilantro
  • 1 teaspoon ground cumin
  • 1 cup KRAFT Shredded Cheddar and Monterey Jack Cheese, divided
  • 1 (4 ounce) can chopped green chilies, drained
  • 8 TACO BELL HOME ORIGINALS Flour Tortillas
  •  Of course you can always replace those brand name products with your favorite brands.
